Alot of George Lucas Star Wars Fans (Myself included) think the disney trilogy is the result of the veil, and is not part of the George’s canon universe.
So the Mandalorian IS in George’s universe, and the disney trilogy is the alternative universe.
Untill it is shown to be in the EU universe it isnt in the true canon universe either.
