Super Mario Kart and Mario Kart 64 are quite dated. They’ve easily been improved upon by later installments.
Mario Kart Wii is a fine game, but IMO Mario Kart 8 is better.
Mario Kart Double Dash is definitely worth checking out for its unique mechanic (two drivers per kart). So if whoever you’re introducing to the franchise enjoys MK8 show them MKDD as well.

Starting with “Mario Kart 8 Deluxe” for the Nintendo Switch is a good place to start. It has a terrific combination of traditional tracks and modern features, making it suitable for both beginners and experienced players.
I’m with DDay on this one, 8 or Wii is the definitive Mario Kart for anyone who needs an introduction to the series.

Mari Kart 64 is by far the best you can go as far as retro, the gameplay is not too far off. If you could find double dash, more power to you, again if you can find it. Then the GBA or DS series isnt bad but not as accessible or gamer friendly as the Wii or 8.</p>
If you look at the whole library, I guarantee you won’t find one as enjoyable or as accessible as Mario Kart 8.
