    <p style=”text-align: left;”>Ever since I worked at a Bistro in Florida, I have become obsessed with cooking. Watching the cooks work and understanding how to make good food with what you have has taught me to trust my cooking instincts that I’ve cultivated from independence and learning from my Italian family.</p>
    I am still no where near as good as the cooks that showed me bits and pieces, but they knew how to cook so well, one of them was originally going to be on master chef but when they found he wasn’t dramatic weirdo for tv, they turned him down. Imagine being so well adjusted, you aren’t picked for tv 😂.

    This one guy also is hired by rich people to cook for them for hunting trips. Now I could never aspire to be that good but to learn an pinky ounce of his skill has taught me the foundation of pushing what you know how to do as a cook.

    And so it inspired me to be a better cook.

    I learned quickly that each chef has multiple knives for different situations, but they have one knife in particular that they hold and maintaining regularly. I bought myself some hand made American Damascus steel and and learned to sharpen and maintain that knife. The discipline of a chef knife has taught me patience and understanding and honestly having your own chef knife is hella cool.

    But I digress, I love cooking. Nower days, I can look at any food someone has and modify it to adjust to my personal taste. I’ve surpassed my fiance who cooks Thai curry since she was a kid, I surpassed family members who cooked for years, and I surpassed my own expectations.

    Pork belly was my largest obstacle, crisping the skin, waiting a day to dry out the skin after scoring it and I’m still learning to master it. But honestly, there’s still so much out there, you’ll never stop learning to use your ingenuity with knowledge.

    Does anyone else have a story about how they learned how to cook or maybe a story about how a recipe they worked on?

    I think it would be fun to have a topic about food. I know I enjoyed writing this.

    This one time, I told this girl I liked she should come over and cook with me. We made a dorito casserole; doritos, chicken, cheese, just absolute orgy of deliciousness on the tastebuds.

    That chick and I have been together nearly 12 years now.
